
Friendship Banana Bread
Simple, sweet and a sharable treat! Wonderful for breakfast or a snack and a thoughtful gift for family and friends.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- ¾ cup brown sugar
- ½ cup butter melted
- 2 eggs
- 1 tsp Vanilla Extract
- 4-5 overripe bananas
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 4 mini loaf pan or a 9x5-inch loaf pan.
- Beat your bananas in a mixing bowl. Once they are mixed add the eggs, vanilla, and melted butter. Mix to combine.
- Add flour, baking soda, brown sugar, and salt to the wet mixture.
- Mix until just combined. Pour batter into the prepared loaf pan.
- Cook until toothpick comes out clean. May vary from oven to oven.
Notes
I use a Pampered Chef Stoneware Mini 4 Loaf Pan and it takes 42 minutes to cook through in my oven.

When I am able to collect 4 – 5 overripe bananas they do not go to waste. I quickly throw this simple recipe together and an hour later I have 4 warm mini loaves of delicious banana bread. Since I purchase bananas throughout the year I make this recipe often.
I call this recipe Friendship Banana Bread because I wrap two or three loaves and take them to my neighbors or a friends house to share!
Years ago I purchased a Pampered Chef Stoneware Mini Loaf Pan. (this is not an ad!) This pan has become the only loaf pan I use for my Banana Bread. You can find many versions of this pan online. This recipe makes 4 miniature loaves that are a wonderful size for a small family or couple. If you want to make the typical version of this recipe it works well in a 9×5 loaf pan. If I happen to have a loaf leftover I freeze it and take it out before visiting friends or family to give as a gift.
I currently have 2 loaves frozen for just the occasion!
Step 1: Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×5-inch loaf pan or a 4 mini loaf pan-like me!

Step 2: Beat your bananas in a mixing bowl.


Step 3: Once they are mixed add the eggs, melted butter and vanilla. Stir to combine.


Step 4: Add flour, baking soda, brown sugar, and salt to the wet mixture. Mix until just combined. It is at this step that you can add chocolate chips, nuts, or another ingredients that you want to flavor your Banana Bread with.



I choose not to add other ingredents as I share my loaves with friends and family and I don’t want to stress with potential preferences or allergies.

Step 6: Pour batter into the prepared loaf pan.

Step 7: Cook until toothpick comes out clean. My loaves take 42 minutes. May vary from oven to oven.
